Tiroler Gröstl

tirolergrostolA heart-warming Tyrolean version of rösti for those cold winter days!

Ingredients for 4 people:
* 750 g CêlaVíta Ready to Heat diced potatoes
* 3 different types of sausage or salami (total 250 g)
* 1 large onion
* 2 cloves garlic, finely chopped
* Handful of flat-leaved parsley
* 4 eggs
* Vegetable oil

Roughly chop the sausages. Peel and roughly chop the onion and fry in a wok or frying pan with some oil. When the onion is transparent, add the pieces of sausage to the pan and fry for another 5 minutes. Add the diced potatoes and the finely chopped garlic and fry, stirring constantly, for about another 6 minutes. At the same time, fry the 4 eggs in another pan. Scatter the finely chopped parsley over the gröstl and serve, topping each portion with a fried egg.
